Zucchini Patties

Zucchini patties are a delicious and versatile dish that can be served as a side dish, appetizer, or even as a veggie burger substitute. Here’s a simple recipe for making zucchini patties:

Ingredients:

  • 2 medium-sized zucchini, grated
  • 1 teaspoon salt
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh herbs (such as parsley, dill, or chives)
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Grate the zucchini using a box grater or a food processor. Place the grated zucchini in a colander, sprinkle with 1 teaspoon of salt, and let it sit for about 10 minutes. This helps draw out excess moisture from the zucchini.
  2. After 10 minutes, use your hands or a clean kitchen towel to squeeze out as much water as possible from the grated zucchini.
  3. In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, chopped herbs, minced garlic, chopped onion, flour, beaten eggs, salt, and pepper. Mix everything well until a uniform mixture forms.
  4. Heat a skillet or frying pan over medium heat and add enough olive oil to coat the bottom.
  5. Take a portion of the zucchini mixture and form it into a patty. Place it in the hot oil and flatten it slightly with a spatula. Repeat with more patties, making sure not to overcrowd the pan.
  6. Cook the patties for about 3-4 minutes per side or until they are golden brown and cooked through.
  7. Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.
  8. Serve the zucchini patties warm with your favorite dipping sauce or as a side dish.

Feel free to customize the recipe by adding your favorite spices, herbs, or even grated cheese to enhance the flavor. These zucchini patties are a great way to enjoy the fresh taste of zucchini and make a tasty and nutritious addition to your meal.
