Crispy golden brown egg rolls are a delicious and popular appetizer or snack! They are usually filled with a combination of vegetables, meat, and sometimes noodles, all wrapped in a thin flour wrapper and fried until crispy and golden. Here’s how you can make them at home:
Ingredients:
- For the filling:
- 1 lb ground pork (or chicken, beef, or shrimp)
- 1 cup cabbage, shredded
- 1/2 cup carrots, julienned or shredded
- 1/4 cup green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- 1/4 cup cooked vermicelli noodles or bean sprouts (optional)
- For wrapping:
- 12 egg roll wrappers (store-bought)
- 1 egg (for sealing)
- For frying:
- Vegetable oil (for deep frying)
Instructions:
- Prepare the filling:
- Heat a pan over medium heat and cook the ground pork (or your choice of meat) until browned, breaking it up into small pieces.
- Add the minced garlic and ginger, and cook for another minute until fragrant.
- Stir in the shredded cabbage, carrots, green onions, and cooked noodles (if using). Cook for about 2-3 minutes, just until the veggies are slightly tender.
- Add soy sauce, oyster sauce, salt, and pepper. Stir everything together, and let the filling cool completely before wrapping.
- Prepare the egg rolls:
- Lay one egg roll wrapper flat on a clean surface, with one corner pointing towards you (like a diamond shape).
- Place 2-3 tablespoons of the filling near the bottom corner of the wrapper.
- Fold the bottom corner up over the filling, then fold in the sides, and roll tightly upwards while sealing the top edge with a bit of beaten egg.
- Fry the egg rolls:
- Heat vegetable oil in a deep pan or wok to around 350°F (175°C). You should have enough oil to fully submerge the egg rolls.
- Fry the egg rolls in batches for about 3-5 minutes, turning occasionally, until they are golden brown and crispy on all sides.
- Remove them from the oil and place on a paper towel-lined plate to drain any excess oil.
- Serve:
- Serve your crispy golden brown egg rolls hot with your favorite dipping sauce, such as sweet and sour sauce or soy sauce.
Enjoy the crispy, flavorful snack!
