crispy golden brown egg rolls

Crispy golden brown egg rolls are a delicious and popular appetizer or snack! They are usually filled with a combination of vegetables, meat, and sometimes noodles, all wrapped in a thin flour wrapper and fried until crispy and golden. Here’s how you can make them at home:

Ingredients:

  • For the filling:
    • 1 lb ground pork (or chicken, beef, or shrimp)
    • 1 cup cabbage, shredded
    • 1/2 cup carrots, julienned or shredded
    • 1/4 cup green onions, chopped
    • 2 cloves garlic, minced
    • 1 tablespoon soy sauce
    • 1 tablespoon oyster sauce (optional)
    • 1 teaspoon ginger, minced
    • Salt and pepper to taste
    • 1/4 cup cooked vermicelli noodles or bean sprouts (optional)
  • For wrapping:
    • 12 egg roll wrappers (store-bought)
    • 1 egg (for sealing)
  • For frying:
    • Vegetable oil (for deep frying)

Instructions:

  1. Prepare the filling:
    • Heat a pan over medium heat and cook the ground pork (or your choice of meat) until browned, breaking it up into small pieces.
    • Add the minced garlic and ginger, and cook for another minute until fragrant.
    • Stir in the shredded cabbage, carrots, green onions, and cooked noodles (if using). Cook for about 2-3 minutes, just until the veggies are slightly tender.
    • Add soy sauce, oyster sauce, salt, and pepper. Stir everything together, and let the filling cool completely before wrapping.
  2. Prepare the egg rolls:
    • Lay one egg roll wrapper flat on a clean surface, with one corner pointing towards you (like a diamond shape).
    • Place 2-3 tablespoons of the filling near the bottom corner of the wrapper.
    • Fold the bottom corner up over the filling, then fold in the sides, and roll tightly upwards while sealing the top edge with a bit of beaten egg.
  3. Fry the egg rolls:
    • Heat vegetable oil in a deep pan or wok to around 350°F (175°C). You should have enough oil to fully submerge the egg rolls.
    • Fry the egg rolls in batches for about 3-5 minutes, turning occasionally, until they are golden brown and crispy on all sides.
    • Remove them from the oil and place on a paper towel-lined plate to drain any excess oil.
  4. Serve:
    • Serve your crispy golden brown egg rolls hot with your favorite dipping sauce, such as sweet and sour sauce or soy sauce.
