Warm custard spoon bread is a delightful Southern comfort food, similar to a pudding-like cornbread or a cross between cornbread and a custard. It’s a creamy and slightly sweet dish that’s perfect as a side dish or even a dessert. Here’s how you can make warm custard spoon bread:

Ingredients:

  • 1 cup yellow cornmeal
  • 2 cups milk
  • 1/4 cup (1/2 stick) unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or a similar-sized ovenproof dish.
  2. In a medium-sized saucepan, combine the cornmeal and milk. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. This should take about 5-7 minutes.
  3. Remove the saucepan from heat and stir in the unsalted butter, sugar, and salt. Mix until the butter is fully melted and the sugar is dissolved.
  4. In a separate bowl, whisk together the eggs, buttermilk, vanilla extract, and baking soda.
  5. Gradually add the egg mixture to the cornmeal mixture, stirring constantly until well combined.
  6. Pour the mixture into the greased baking dish.
  7. Bake in the preheated oven for 35-40 minutes, or until the spoon bread is set and lightly browned on top. It should have a slightly crispy crust, but the inside should remain soft and custard-like.
  8. Remove from the oven and let it cool slightly before serving. The spoon bread will firm up as it cools.
  9. Serve the warm custard spoon bread as a side dish for savory meals or enjoy it as a comforting dessert. It’s delicious on its own or drizzled with a bit of maple syrup or honey if you prefer it sweeter.
