Ingredients:

  • 2 lobsters (about 1 1/2 to 2 pounds each)
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup grated Gruyere or Parmesan cheese
  • 2 tablespoons Dijon mustard
  • 1/4 cup dry white wine
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • Lemon wedges for garnish

Instructions:

  1. Cook the Lobsters:
    • Boil or steam the lobsters until they are just cooked through. Let them cool slightly, then remove the meat from the shells and chop it into bite-sized pieces.
  2. Make the Sauce:
    • In a saucepan, melt the butter over medium heat. Stir in the flour to create a roux. Cook for 2-3 minutes until it’s lightly golden.
    • Gradually whisk in the milk and heavy cream to create a smooth sauce. Cook, stirring constantly, until the mixture thickens.
    • Add the cheese, mustard, and wine. Stir until the cheese is melted and the sauce is smooth.
    • Season the sauce with salt and pepper to taste.
  3. Combine Lobster and Sauce:
    • Fold the chopped lobster meat into the sauce, making sure it’s evenly coated.
  4. Bake:
    • Preheat your oven to broil.
    • Transfer the lobster and sauce mixture to a baking dish. Place it under the broiler until the top is golden and bubbly.
  5. Serve:
    • Sprinkle chopped parsley over the top for freshness and garnish with lemon wedges.
