Basic Sweet Crepe Recipe:

Ingredients:

  • 2 tablespoons melted butter

  • 1/2 teaspoon vanilla extract (optional)

Instructions:

  1. In a blender or mixing bowl, combine the flour, eggs, milk, water, melted butter, sugar, vanilla extract (if using), and a pinch of salt. Blend or whisk until the batter is smooth. Let the batter rest for about 20-30 minutes at room temperature to allow any bubbles to settle.
  2. Heat a non-stick skillet or crepe pan over medium-high heat. Lightly grease it with a small amount of butter or cooking spray.
  3. Pour a small amount of the crepe batter (about 1/4 cup) into the center of the hot skillet. Quickly tilt the skillet in a circular motion to spread the batter evenly across the bottom.
  4. Cook the crepe for about 1-2 minutes, or until the edges start to turn golden brown and lift away from the pan. Use a spatula to carefully flip the crepe and cook for an additional 1-2 minutes on the other side, until lightly golden.

  5. Mixed Berries and Yogurt: Fill the crepe with a mixture of fresh mixed berries (such as strawberries, blueberries, and raspberries) and a spoonful of Greek yogurt. Roll it up.
  6. Chocolate Sauce and Whipped Cream: Drizzle the crepe with chocolate sauce and top it with a generous amount of whipped cream.
  7. Caramelized Apples: Cook thinly sliced apples with butter and brown sugar until caramelized, then fill the crepe with the mixture.
