Supreme Pizza Puffs (keto + low carb)

Supreme Pizza Puffs that are keto and low carb are a tasty snack or appetizer that can satisfy your pizza cravings while adhering to a ketogenic or low-carb diet. Here’s a recipe to make them:

Ingredients:

For the pizza puff batter:

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup unsweetened almond milk
  • Salt and pepper to taste

For the pizza filling:

  • 1/4 cup diced pepperoni
  • 1/4 cup diced bell peppers (use colorful peppers for added visual appeal)
  • 1/4 cup sliced black olives
  • 1/4 cup diced red onion
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup pizza sauce (check for low-carb options)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or line it with mini muffin liners.
  2. In a mixing bowl, combine the almond flour, coconut flour, baking powder, Italian seasoning, garlic powder, onion powder, grated Parmesan cheese, salt, and pepper.
  3. In a separate bowl, whisk together the eggs, melted butter, and unsweetened almond milk.
  4. Pour the wet ingredients into the dry ingredients and stir until you have a smooth batter.
  5. Fold in the diced pepperoni, bell peppers, black olives, and red onion to create your pizza filling.
  6. Spoon the batter into the mini muffin tin, filling each cavity about halfway.
  7. Add a small dollop of pizza sauce on top of each muffin, followed by a sprinkle of shredded mozzarella cheese.
  8. Bake in the preheated oven for 15-18 minutes or until the puffs are set and slightly golden brown on top.
  9. Allow the pizza puffs to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  10. Serve your Supreme Pizza Puffs as a delicious keto-friendly snack or appetizer. You can also enjoy them with additional pizza sauce for dipping.
