Strawberry Piña Colada with Malibu Frosting

Ingredients:

For the Strawberry Piña Colada:

  • 1 cup frozen strawberries
  • 1 cup pineapple chunks (fresh or frozen)
  • 1/2 cup coconut cream (or coconut milk for a lighter version)
  • 1/4 cup white rum (Malibu for a coconut flavor)
  • 1/4 cup pineapple juice
  • 1 tablespoon sugar or sweetener (optional, depending on the sweetness of your fruit)
  • Ice cubes

For the Malibu Frosting:

  • 1 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1-2 tablespoons Malibu rum (to taste)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Make the Strawberry Piña Colada:

    • In a blender, combine the frozen strawberries, pineapple chunks, coconut cream, rum, pineapple juice, and sugar.
    • Add a handful of ice cubes and blend until smooth and creamy.
    • Taste and adjust sweetness if needed by adding a little more sugar or pineapple juice.
    • Pour into glasses, garnish with a slice of pineapple or a strawberry on the rim if desired.
  2. Make the Malibu Frosting:

    • In a medium-sized bowl, beat the softened butter until creamy.
    • Gradually add the powdered sugar, one tablespoon at a time, and mix until smooth.
    • Add the Malibu rum, vanilla extract, and a pinch of salt, and continue mixing until everything is well incorporated.
    • If the frosting is too thick, you can add a bit more Malibu rum or a touch of milk to reach your desired consistency.
  3. Assemble the Drink:

    • Once your Piña Colada is ready, top it with a generous dollop of Malibu Frosting.
    • Optionally, garnish with toasted coconut flakes or extra fruit slices for that extra tropical touch.
