Southern Potato Salad

Certainly! Here’s a classic recipe for Southern Potato Salad:

Ingredients:

  • 4 cups potatoes, peeled and diced
  • 3 hard-boiled eggs, chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup onion, finely chopped
  • 1/4 cup sweet pickle relish
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Paprika for garnish (optional)

Instructions:

  1. Start by boiling the diced potatoes in a large pot of salted water until they are fork-tender. This usually takes about 10-15 minutes, depending on the size of the potato chunks. Be careful not to overcook, as you want the potatoes to hold their shape.
  2. Once the potatoes are cooked, drain them and let them cool to room temperature.
  3. In a large mixing bowl, combine the cooled potatoes, chopped hard-boiled eggs, celery, onion, and sweet pickle relish.
  4. In a separate bowl, whisk together the mayonnaise, Dijon mustard, and apple cider vinegar. Pour this dressing over the potato mixture and gently toss everything together until well coated. Adjust the amount of mayo and mustard to your taste.
  5. Season the potato salad with salt and pepper to taste. Keep in mind that the potatoes will absorb some of the seasoning, so you may need to add more after chilling.
  6. Cover the bowl and refrigerate the potato salad for at least a couple of hours to allow the flavors to meld.
  7. Before serving, you can sprinkle paprika over the top for a decorative touch.
