Here’s a simple and soft no-mixer donut recipe you can easily make at home. These donuts are light, fluffy, and require minimal effort!
Ingredients:
For the Donuts:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground nutmeg (optional for flavor)
- 1/4 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1/4 cup melted unsalted butter (or vegetable oil)
- 1 teaspoon vanilla extract
- Vegetable oil for frying
For the Glaze (optional but recommended):
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions:
1. Prepare the Donut Dough:
- In a large bowl, whisk together the flour, baking powder, salt, nutmeg, and sugar.
- In a separate bowl, whisk the eggs, milk, melted butter (or oil), and vanilla extract together until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The dough will be slightly sticky but should hold together.
2. Shape the Donuts:
- Lightly flour a clean surface and your hands, then gently knead the dough a few times until it comes together (don’t overwork it).
- Roll out the dough to about 1/2-inch thickness using a rolling pin.
- Using a donut cutter or two round cookie cutters (one larger and one smaller for the hole), cut out the donuts.
3. Fry the Donuts:
- Heat vegetable oil in a deep pot or frying pan to about 350°F (175°C). Make sure the oil is deep enough to fully submerge the donuts.
- Carefully drop the donuts into the hot oil, a few at a time. Fry until golden brown, about 1-2 minutes per side.
- Use tongs or a slotted spoon to remove the donuts from the oil and place them on a paper towel-lined plate to drain excess oil.
4. Glaze the Donuts (optional):
- While the donuts are cooling slightly, make the glaze by whisking together the powdered sugar, milk, and vanilla extract in a bowl until smooth.
- Dip each warm donut into the glaze, ensuring it’s evenly coated. Place the glazed donuts on a wire rack to allow the glaze to set.
