Ingredients:

  • 3-4 pounds of boneless pork shoulder or pork loin roast
  • 1 cup brown sugar, packed
  • 1/2 cup chicken broth or apple cider
  • 1/4 cup soy sauce
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • Salt and pepper to taste

Instructions:

  1. Start by mixing the brown sugar, chicken broth or apple cider, soy sauce, Dijon mustard, minced garlic, and ground ginger in a bowl. Stir until the brown sugar has dissolved, creating the brown sugar glaze.
  2. Season the pork roast with salt and pepper to taste. Place it in the slow cooker.
  3. Pour the brown sugar glaze over the pork roast in the slow cooker, making sure to coat it evenly.
  4. Cover the slow cooker with the lid and cook on low heat for 6-8 hours, or until the pork is tender and easily shreds with a fork.
  5. Once the pork is cooked, remove it from the slow cooker and shred it using two forks.
  6. Return the shredded pork to the slow cooker and mix it with the brown sugar glaze. Let it cook for an additional 30 minutes on low to allow the flavors to meld.
  7. Serve the brown sugar glazed pork hot, either as a sandwich filling, over rice, or with your favorite side dishes.
