ROTEL TACOS RECIPE

Rotel tacos are a quick and easy Tex-Mex dish made with Rotel diced tomatoes and green chilies. Here’s a simple recipe for Rotel tacos:

Ingredients:

  • 1 pound ground beef (or ground turkey, chicken, or meat substitute)
  • 1 small onion, finely chopped
  • 1 packet of taco seasoning mix (or use homemade seasoning)
  • 1 can (10 ounces) Rotel Original Diced Tomatoes and Green Chilies, undrained
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 8 small taco shells or tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, diced onions, sour cream, guacamole, and sliced olives

Instructions:

  1. Cook the Meat:
    • In a large skillet over medium-high heat, cook the ground beef (or your choice of meat) and chopped onions until the meat is browned and the onions are soft, breaking up the meat into crumbles as it cooks.
  2. Drain Excess Fat (if necessary):
    • Depending on the meat you use, you may need to drain any excess fat from the skillet.
  3. Add Taco Seasoning:
    • Sprinkle the taco seasoning mix over the cooked meat and stir well to combine. You can adjust the amount of seasoning to your taste.
  4. Add Rotel Tomatoes and Chilies:
    • Pour the can of Rotel Original Diced Tomatoes and Green Chilies, including the liquid, into the skillet with the meat mixture. Stir to combine.
  5. Simmer:
    • Reduce the heat to low, and let the mixture simmer for about 5-7 minutes, or until it thickens slightly and the flavors meld together.
  6. Warm the Taco Shells:
    • While the meat mixture is simmering, warm the taco shells or tortillas according to the package instructions.
  7. Assemble the Tacos:
    • Spoon the Rotel meat mixture into each taco shell.
    • Top with shredded cheese and any optional toppings you like, such as lettuce, diced tomatoes, onions, sour cream, guacamole, or sliced olives.
  8. Serve:
    • Serve the Rotel tacos immediately while they are hot and enjoy!

Rotel tacos are customizable, so feel free to add your favorite toppings and adjust the level of spiciness to your liking. This recipe is quick to make and perfect for a weeknight dinner or a casual gathering with friends and family.
