ROASTED GARLIC MASHED POTATOES

Roasted garlic mashed potatoes are a delicious and savory side dish that pairs well with various main courses. Here’s a simple recipe to make them:

Ingredients:

  • 4 large russet potatoes, peeled and cut into chunks
  • 1 whole head of garlic
  • 2 tablespoons olive oil
  • 1/2 cup milk (or more for creamier consistency)
  • 4 tablespoons butter
  • Salt and pepper to taste
  • Chopped fresh chives or parsley for garnish (optional)

Instructions:

  1. Roast the Garlic:
    • Preheat your oven to 400°F (200°C).
    • Cut the top off the head of garlic, exposing the cloves.
    • Place the garlic head on a piece of aluminum foil, drizzle it with olive oil, and wrap it in the foil.
    • Roast in the preheated oven for about 30-40 minutes or until the garlic cloves are soft and golden.
    • Remove from the oven and let it cool. Squeeze the roasted garlic cloves out of their skins.
  2. Boil the Potatoes:
    • Place the peeled and chopped potatoes in a large pot and cover them with cold, salted water.
    • Bring the water to a boil, then reduce the heat to a simmer, and cook for about 15-20 minutes or until the potatoes are tender when pierced with a fork.
  3. Mash the Potatoes:
    • Drain the cooked potatoes and return them to the pot.
    • Add the roasted garlic, butter, and a pinch of salt and pepper.
    • Use a potato masher or a hand mixer to mash the potatoes until smooth and creamy.
    • Gradually add the milk while mashing until you reach your desired consistency. You may need more or less milk, depending on your preference.
  4. Adjust Seasoning:
    • Taste the mashed potatoes and adjust the salt and pepper as needed. You can also add more butter or milk for creaminess.
  5. Serve:
    • Transfer the roasted garlic mashed potatoes to a serving dish.
    • Garnish with chopped fresh chives or parsley if desired.
