Potato Foil Packets

Posted on January 16, 2024

Potato foil packets are a delicious and easy way to prepare potatoes, whether you’re grilling, baking, or even cooking over a campfire. Here’s a basic recipe for making potato foil packets:

Ingredients:

  • Potatoes (any variety), washed and diced
  • Olive oil or melted butter
  • Salt and pepper to taste
  • Optional seasonings: garlic powder, onion powder, paprika, herbs (rosemary, thyme, etc.)
  • Optional toppings: shredded cheese, chopped green onions, bacon bits

Instructions:

  1. Prepare Potatoes:
    • Wash and dice the potatoes into bite-sized pieces. You can leave the skin on for added texture and nutrition.
  2. Season Potatoes:
    • In a bowl, toss the diced potatoes with olive oil or melted butter. Season with salt, pepper, and any optional seasonings you like. Mix well to coat the potatoes evenly.
  3. Create Foil Packets:
    • Tear off sheets of aluminum foil, each large enough to hold a serving of potatoes. Place a portion of the seasoned potatoes in the center of each foil sheet.
  4. Fold and Seal:
    • Fold the sides of the foil over the potatoes, creating a packet. Ensure the packet is well-sealed to trap the steam during cooking.
  5. Cooking Method:
    • Grilling: Preheat the grill to medium-high heat. Place the foil packets on the grill grates and cook for about 20-30 minutes, turning occasionally, until the potatoes are tender.
    • Baking: Preheat the oven to 425°F (220°C). Place the foil packets on a baking sheet and bake for approximately 30-40 minutes or until the potatoes are cooked through.
    • Campfire: Place the foil packets on hot coals or a campfire grate and cook for 20-30 minutes, turning occasionally. Cooking times may vary depending on the intensity of the fire.
  6. Serve:
    • Carefully open the foil packets (watch out for steam) and check the potatoes for doneness. If desired, sprinkle with additional toppings like shredded cheese, green onions, or bacon bits before serving.

These potato foil packets are versatile, and you can customize them with your favorite flavors. They make a great side dish for various meals and are perfect for outdoor gatherings or camping trips.
