Savory Blender Pie (Salty Cake) Recipe

Ingredients:

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cold butter, cut into small cubes
  • 1/4 teaspoon salt
  • 1/4 cup ice water

For the Filling:

  • 3 eggs
  • 1 cup milk
  • 1 cup grated cheese (cheddar, Gruyere, or your choice)
  • 1/2 cup diced cooked ham or bacon (optional)
  • 1/2 cup diced vegetables (bell peppers, onions, spinach, etc.)
  • Salt and pepper to taste
  • 1/4 teaspoon dried herbs (thyme, oregano, or your choice)

Instructions:

  1. Prepare the Crust:
    • In a blender, combine the all-purpose flour and cold butter cubes. Pulse until the mixture resembles coarse crumbs.
    • Add the salt and pulse a few more times to mix.
    • With the blender running on low, gradually add the ice water until the dough comes together. You may not need all of the water, so add it slowly.
    • Remove the dough from the blender and shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
  2. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  3. Roll Out the Crust:
    • Roll out the chilled dough on a floured surface to fit your pie or tart pan.
  4. Prepare the Filling:
    • In the same blender (no need to wash it), combine the eggs, milk, grated cheese, diced ham or bacon (if using), diced vegetables, salt, pepper, and dried herbs.
    • Blend until everything is well combined.
  5. Assemble the Pie:
    • Place the rolled-out crust into your pie or tart pan.
    • Pour the blended filling mixture into the crust.
  6. Bake:
    • Place the pie in the preheated oven and bake for about 30-35 minutes or until the filling is set and the top is golden brown.
  7. Serve:
    • Allow the pie to cool slightly before slicing and serving. It can be served warm or at room temperature.
