Peaches and Cream Cheesecake Bars

Peaches and Cream Cheesecake Bars are a delicious and delightful dessert that combines the rich and creamy texture of cheesecake with the sweet and juicy flavor of peaches. Here’s a simple recipe for you to try:

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 cup sour cream

For the Peach Topping:

  • 3 cups fresh or canned peaches, peeled and diced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch

Instructions:

1. Preheat the Oven:

Preheat your oven to 325°F (163°C). Grease a 9×13-inch baking dish with butter or cooking spray.

2. Prepare the Crust:

In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the prepared baking dish to form an even crust.

3. Make the Cheesecake Filling:

a. In a large mixing bowl, beat the cream cheese until smooth and creamy. b. Add the sugar and continue to beat until well combined. c. Add the eggs one at a time, beating well after each addition. d. Mix in the vanilla extract and flour until just combined. e. Finally, fold in the sour cream.

4. Assemble and Bake:

Pour the cheesecake filling over the crust in the baking dish, spreading it evenly.

5. Prepare the Peach Topping:

a. In a saucepan, combine the diced peaches, sugar, lemon juice, and cornstarch. b. Cook over medium heat, stirring frequently, until the mixture thickens and the peaches are softened. Remove from heat and let it cool slightly.

6. Add the Peach Topping:

Spoon the peach topping over the cheesecake layer, spreading it evenly.

7. Bake:

Bake in the preheated oven for about 45-50 minutes or until the center is set. The edges should be lightly golden.

8. Cool and Chill:

Allow the Peaches and Cream Cheesecake Bars to cool completely in the baking dish on a wire rack. Once cooled, refrigerate for at least 4 hours or overnight before cutting into bars.

9. Serve:

Cut into squares or bars and serve chilled. Enjoy the delightful combination of peaches and cream in every bite!
