Oreo Keto Chaffles

Oreo Keto Chaffles are a low-carb, keto-friendly version of the classic Oreo cookie made using a chaffle recipe. Chaffles are a popular keto and low-carb alternative to traditional waffles, typically made with eggs and cheese. Here’s a basic recipe for Oreo Keto Chaffles:

Ingredients:

For the Chaffle Batter:

  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup almond flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • Sweetener to taste (use a keto-friendly sweetener like erythritol or stevia)

For the Oreo Filling:

  • 4 ounces cream cheese, softened
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons powdered erythritol or a similar keto-friendly sweetener
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Make the Chaffle Batter:
    • Preheat your mini waffle maker or chaffle iron according to the manufacturer’s instructions.
    • In a bowl, whisk together the eggs, almond flour, unsweetened cocoa powder, baking powder, vanilla extract, salt, and your chosen keto-friendly sweetener. Mix until well combined.
    • Fold in the shredded mozzarella cheese until the batter is smooth.
  2. Cook the Chaffles:
    • Lightly grease the waffle maker or chaffle iron with cooking spray or a bit of coconut oil.
    • Pour half of the chaffle batter into the preheated waffle maker, close the lid, and cook until it’s golden brown and crispy (usually about 3-5 minutes, but times may vary depending on your device). Repeat with the remaining batter.
    • Transfer the chaffles to a wire rack to cool slightly.
  3. Make the Oreo Filling:
    • In a separate bowl, combine the softened cream cheese, unsweetened cocoa powder, powdered erythritol, and vanilla extract. Mix until smooth and creamy.
  4. Assemble the Oreo Keto Chaffles:
    • Once the chaffles have cooled slightly, spread the Oreo filling on one chaffle and then top it with another chaffle to create a sandwich.
    • Optionally, you can dust the assembled Oreo Keto Chaffle with a bit of cocoa powder or crushed sugar-free chocolate chips.
  5. Serve and Enjoy:
    • Serve your Oreo Keto Chaffles while they are still warm, as they are often most delicious when freshly made.
