Old-fashioned oven-baked peach cobbler is a timeless dessert that’s warm, comforting, and full of the delightful flavors of ripe peaches. Here’s a classic recipe for you to enjoy:

Ingredients for the Peach Filling:

  • 6-8 fresh peaches, peeled, pitted, and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons cornstarch

Ingredients for the Cobbler Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 1/4 cup boiling water

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced peaches, sugar, lemon juice, vanilla extract, cinnamon, nutmeg, and cornstarch. Mix gently until the peaches are well coated, then transfer the mixture to a baking dish.
  3. In a separate bowl, combine the flour, sugar, baking powder, and salt for the cobbler topping. Cut in the chilled butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. Stir in the boiling water, just until the mixture comes together into a thick, sticky dough.
  5. Drop spoonfuls of the cobbler dough over the peaches in the baking dish.
  6. Bake the peach cobbler in the preheated oven for 35-40 minutes, or until the cobbler topping is golden brown and the peach filling is bubbling.
  7. Remove the cobbler from the oven and let it cool slightly before serving.
