No-Bake Peanut Butter Haystacks

No-bake peanut butter haystacks are a delicious and easy-to-make treat that requires minimal ingredients and time. Here’s a simple recipe for you:

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter
  • 2 cups old-fashioned oats
  • 2 cups chow mein noodles
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt (if using unsalted peanut butter and/or unsalted butter)

Instructions:

  1. Prepare Ingredients:
    • Measure out all the ingredients before you start, as the process can be quick.
  2. Melt Peanut Butter and Butter:
    • In a large saucepan over low heat, melt the peanut butter and butter together. Stir until smooth and well combined. If you’re using unsalted peanut butter and/or unsalted butter, you might want to add a pinch of salt to enhance the flavor.
  3. Add Chocolate and Butterscotch Chips:
    • Once the peanut butter and butter are melted, add the chocolate chips and butterscotch chips to the saucepan. Stir continuously until the chips are completely melted and the mixture is smooth.
  4. Stir in Vanilla Extract:
    • Remove the saucepan from heat and stir in the vanilla extract.
  5. Combine Oats and Chow Mein Noodles:
    • In a large mixing bowl, combine the old-fashioned oats and chow mein noodles.
  6. Pour Peanut Butter Mixture Over Dry Ingredients:
    • Pour the melted peanut butter and chocolate mixture over the oats and chow mein noodles. Stir until everything is well coated.
  7. Shape into Haystacks:
    • Line a baking sheet with wax paper or parchment paper. Using a spoon, drop mounds of the mixture onto the prepared baking sheet, shaping them into haystacks. You can make them as small or large as you like.
  8. Chill:
    • Place the baking sheet in the refrigerator and let the haystacks chill until they are firm, usually for about 1-2 hours.
  9. Serve:
    • Once the haystacks are set, remove them from the refrigerator and serve. Store any leftovers in an airtight container in the refrigerator.

These no-bake peanut butter haystacks are a delightful combination of sweet and salty flavors, and they make for a great snack or dessert. Feel free to customize the recipe by adding nuts, dried fruits, or other mix-ins of your choice!
