No-Bake Blueberry Yum Yum

No-Bake Blueberry Yum Yum is a delightful, easy-to-make dessert that combines a creamy filling with a crunchy base, topped with fresh blueberries. Here’s a simple recipe for you:

Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup butter, melted

For the filling:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 ½ cups whipped topping (like Cool Whip)
  • 1 teaspoon vanilla extract

For the blueberry topping:

  • 2 cups fresh or frozen blueberries
  • ⅓ cup sugar
  • 1 tablespoon cornstarch
  • ¼ cup water

Instructions:

1. Prepare the crust:

  • In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are evenly coated.
  • Press the mixture into the bottom of a 9×9-inch baking dish (or similar size) to form a firm crust.
  • Refrigerate while you prepare the filling.

2. Make the filling:

  • In a medium bowl, beat the softened cream cheese and powdered sugar together until smooth.
  • Fold in the whipped topping and vanilla extract until well combined.
  • Spread the cream cheese mixture evenly over the chilled crust.

3. Prepare the blueberry topping:

  • In a saucepan, combine the blueberries, sugar, cornstarch, and water.
  • Cook over medium heat, stirring occasionally, until the blueberries soften and the mixture thickens (about 5-7 minutes).
  • Remove from heat and allow it to cool completely before spreading it over the cream cheese layer.

4. Assemble and chill:

  • Once the blueberry topping has cooled, spread it evenly over the cream cheese layer.
  • Refrigerate the dessert for at least 4 hours or overnight to let it set.

5. Serve:

  • Once set, slice and serve your No-Bake Blueberry Yum Yum. Enjoy!

Notes:

  • If using frozen blueberries, make sure to thaw and drain them before cooking the topping.
  • You can also top with extra whipped cream or fresh blueberries for extra decoration before serving.

This is a perfect dessert for a hot day when you don’t want to turn on the oven, or when you’re looking for something quick and refreshing!
