Ninja Foodi Chicken and Rice

Ninja Foodi Chicken and Rice is a quick and delicious one-pot meal. Here’s a basic recipe to get you started:

Ingredients:

  • 1.5 pounds of boneless, skinless chicken thighs or breasts
  • 1 cup of long-grain white rice
  • 1.5 cups of chicken broth
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 cup of frozen peas and carrots
  • 1 teaspoon of paprika
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon of salt (adjust to taste)
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of olive oil

Instructions:

  1. Turn on the Ninja Foodi and select the “Sear/Sauté” function. Add the olive oil and let it heat up.
  2. Season the chicken with salt, pepper, paprika, and thyme.
  3. Sear the chicken in the hot oil for 2-3 minutes on each side until they develop a golden brown crust. Remove the chicken from the pot and set it aside.
  4. In the same pot, add the chopped onion and garlic. Sauté for a few minutes until they become translucent.
  5. Add the rice to the pot and stir it for about 2 minutes until it’s lightly toasted.
  6. Pour in the chicken broth and stir, scraping the bottom to release any browned bits. This adds flavor to the dish.
  7. Return the seared chicken to the pot on top of the rice.
  8. Add the chopped bell pepper and the frozen peas and carrots.
  9. Close the Ninja Foodi lid and select the “Pressure Cook” function. Set it to cook for about 6-8 minutes (adjust based on your rice type and chicken thickness). Use the “High” pressure setting.
  10. Once the cooking cycle is complete, do a quick pressure release and carefully open the lid.
  11. Check the chicken for doneness. It should reach an internal temperature of 165°F (74°C) for chicken.
  12. Gently fluff the rice with a fork and serve the chicken and rice with your favorite garnishes, like fresh herbs or a squeeze of lemon.
