MOUNDS CAKE

Certainly! Here’s a recipe for a Mounds Cake, inspired by the flavors of the popular Mounds candy bar:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Coconut Filling:

  • 2 cups shredded sweetened coconut
  • 1/2 cup sweetened condensed milk

For the Chocolate Ganache:

  • 1 cup heavy cream
  • 12 ounces semi-sweet chocolate chips

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Make the Cake:
    • In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes.
    • Stir in the boiling water until the batter is well combined. The batter will be thin; this is normal.
  3. Bake the Cake:
    • Pour the batter evenly into the prepared pans. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  4. Make the Coconut Filling:
    • In a bowl, mix together the shredded sweetened coconut and sweetened condensed milk until well combined.
  5. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread the coconut filling evenly over the top.
    • Place the second cake layer on top of the coconut filling.
  6. Make the Chocolate Ganache:
    • In a saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat.
    • Add the chocolate chips to the hot cream and let them sit for a minute. Stir until smooth and well combined.
  7. Frost the Cake:
    • Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
    • Optionally, you can spread the ganache on the sides of the cake for full coverage.
  8. Chill the Cake:
    • Place the cake in the refrigerator for a few hours to allow the ganache to set.
  9. Serve:
    • Slice and serve your delicious Mounds Cake!
