MINI MADE POTATO CAKES

Ingredients:

  • 2 cups mashed potatoes (cooled)
  • 1/2 cup grated cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup finely chopped green onions
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • Salt and pepper to taste
  • Cooking oil (vegetable or olive oil)

Instructions:

  1. Prepare Mashed Potatoes:
    • Peel, chop, and boil potatoes until tender. Mash them and let them cool.
  2. Mix Ingredients:
    • In a large bowl, combine the mashed potatoes, grated cheese, chopped green onions, flour, beaten egg, salt, and pepper. Mix until well combined.
  3. Form Mini Cakes:
    • Take a small amount of the mixture and shape it into a small patty or cake, about 2 inches in diameter. Repeat until all the mixture is used.
  4. Heat Oil:
    • In a skillet or frying pan, heat oil over medium heat.
