Mexican Keto Casserole Rounds are a delicious low-carb and ketogenic-friendly dish that combines the flavors of Mexican cuisine in a convenient casserole form. Here’s a basic recipe to make these rounds:

Ingredients:

For the Casserole Rounds:

  • 1 pound ground beef or ground turkey (you can also use a combination)
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 packet of taco seasoning mix (make sure it’s low-carb or keto-friendly)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper to taste
  • Cooking oil for sautéing

For the Toppings (Optional):

  • Sliced black olives
  • Sliced jalapeños
  • Sliced avocado
  • Chopped green onions
  • Salsa or hot sauce

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a bit of cooking oil over medium-high heat. Add the chopped onion, red bell pepper, and garlic. Sauté until the vegetables are softened and the onion becomes translucent.
  3. Add the ground meat to the skillet and cook until it’s browned and fully cooked through, breaking it into small crumbles as it cooks. Drain any excess fat if necessary.
  4. Stir in the taco seasoning mix and a little water (according to the seasoning packet instructions). Simmer for a few minutes until the mixture thickens.
  5. Remove the skillet from the heat and stir in the sour cream, half of the shredded cheddar cheese, half of the shredded mozzarella cheese, and chopped cilantro (if using). Season with salt and pepper to taste.
  6. Using a round cookie cutter or a small bowl as a guide, cut out rounds from low-carb tortillas or other keto-friendly flatbreads. The size of the rounds will depend on your preference, but aim for them to be roughly 4-6 inches in diameter.
  7. Place the round tortillas on a baking sheet lined with parchment paper.
  8. Spoon the meat and cheese mixture onto each round, spreading it out evenly.
  9. Top each round with the remaining shredded cheese.
  10. Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden brown.
  11. Remove from the oven and let them cool slightly before serving.
  12. Optional: Garnish with sliced black olives, jalapeños, avocado slices, chopped green onions, and a drizzle of salsa or hot sauce.
