Mexican Casserole Rounds

Mexican Casserole Rounds are a delicious and versatile dish that combines the flavors of Mexican cuisine with a convenient, round shape. This dish is perfect for gatherings, parties, or family dinners. While there isn’t a single standard recipe for Mexican Casserole Rounds, I can provide you with a basic idea of how to make them.

Ingredients:

  • Flour tortillas (round, large)
  • Ground beef or turkey (cooked and seasoned with taco seasoning)
  • Refried beans
  • Salsa
  • Shredded cheese (typically a Mexican blend)
  • Sour cream (for serving)
  • Sliced jalapeños (optional, for some heat)
  • Chopped fresh cilantro (for garnish)

Instructions:

  1. Preheat your oven to the temperature specified on the package of flour tortillas. Typically, it’s around 350°F (175°C).
  2. Lay one flour tortilla on a clean surface or a baking sheet.
  3. Spread a layer of refried beans on top of the tortilla, leaving a small border around the edges.
  4. Add a layer of cooked and seasoned ground beef or turkey on top of the beans.
  5. Spoon some salsa over the meat layer. You can adjust the amount based on your preference for spiciness.
  6. Sprinkle a generous amount of shredded cheese on top of the salsa layer. Use a Mexican cheese blend for an authentic flavor.
  7. If you like some heat, add sliced jalapeños on top of the cheese.
  8. Place another flour tortilla on top of the layered ingredients, pressing it down gently.
  9. Repeat the layering process with beans, meat, salsa, cheese, and optional jalapeños.
  10. Continue layering until you’ve used all the ingredients or reached your desired thickness.
  11. Finish with a final tortilla on top and sprinkle more shredded cheese on it.
  12. Place the casserole rounds in the preheated oven and bake for about 20-25 minutes or until the cheese is melted, and the casserole is heated through.
  13. Once done, remove from the oven and let it cool for a few minutes before cutting it into wedges, like you would a pizza.
  14. Garnish with chopped fresh cilantro.
  15. Serve your Mexican Casserole Rounds with sour cream on the side or drizzled on top.
