Keto Pumpkin Cream Cheese Muffins

Keto Pumpkin Cream Cheese Muffins are a delicious low-carb, high-fat treat that’s perfect for satisfying your autumn cravings. Here’s a recipe to make these muffins:

Ingredients:

For the Muffins:

  • 1 1/2 cups almond flour
  • 1/3 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin spice (or a mix of cinnamon, nutmeg, and cloves)
  • 1/2 cup pumpkin puree (canned or homemade)
  • 1/3 cup granulated erythritol or your preferred keto-friendly sweetener
  • 3 large eggs
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, salt, and pumpkin spice. Ensure there are no lumps.
  3. In another bowl, mix the pumpkin puree, granulated erythritol, eggs, melted butter or coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.
  5. In a separate bowl, prepare the cream cheese filling. Beat together the softened cream cheese, powdered erythritol, and vanilla extract until it’s smooth and creamy.
  6. Scoop a spoonful of the pumpkin batter into each muffin cup, filling each about 1/3 full.
  7. Add a dollop (about a teaspoon) of the cream cheese mixture on top of the pumpkin batter in each cup.
  8. Cover the cream cheese layer with more pumpkin batter, filling each muffin cup about 2/3 full.
  9. Optional: You can sprinkle some additional pumpkin spice or a keto-friendly sweetener on top of each muffin for added flavor and decoration.
  10. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  11. Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
