Keto Garlic Rolls

Certainly! Here’s a recipe for keto garlic rolls that you can enjoy as a delicious and low-carb side dish:

Ingredients:

For the dough:

  • 2 cups mozzarella cheese, shredded
  • 2 oz cream cheese
  • 3/4 cup almond flour
  • 2 teaspoons baking powder
  • 2 large eggs

For the garlic topping:

  • 3 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (optional)
  • Salt, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are melted and well combined.
  3. In a separate bowl, whisk together the almond flour and baking powder.
  4. Once the cheese mixture is melted, add the almond flour mixture and the eggs. Mix well until a dough forms. You might need to use your hands to knead the dough as it can be quite sticky.
  5. Divide the dough into 6 equal portions and shape them into rolls. Place the rolls on the prepared baking sheet.
  6. Bake the rolls in the preheated oven for about 15-20 minutes, or until they are golden brown and cooked through.
  7. While the rolls are baking, prepare the garlic topping. In a small bowl, mix the melted butter, minced garlic, chopped parsley (if using), and a pinch of salt.
  8. Once the rolls are done baking, remove them from the oven and brush the garlic topping over the tops of the rolls.
  9. Return the rolls to the oven for an additional 3-5 minutes, or until the garlic is fragrant and the rolls are nicely browned.
  10. Remove the rolls from the oven and allow them to cool slightly before serving.
