Here’s a basic recipe and some tips to help you achieve great taste:

Ingredients:

  1. 2 large eggs
  2. 2 tablespoons almond flour
  3. 2 tablespoons coconut flour
  4. 2 tablespoons unsweetened almond milk (or any low-carb milk of your choice)
  5. 1 tablespoon melted butter or coconut oil
  6. 1/2 teaspoon baking powder
  7. A pinch of salt
  8. Sweetener of your choice (e.g., erythritol, stevia) to taste
  9. Vanilla extract (optional)
  10. Cinnamon or other spices (optional)

Instructions:

  1. In a bowl, whisk together the eggs, almond flour, coconut flour, almond milk, melted butter or coconut oil, baking powder, salt, sweetener, and any optional flavorings like vanilla extract or spices. Adjust the sweetness to your preference.
  2. Let the batter rest for a few minutes to allow the coconut flour to absorb some of the liquid. The batter should be thick but pourable. If it’s too thick, you can add a bit more almond milk to reach your desired consistency.
  3. Heat a non-stick skillet or griddle over medium heat and add a little butter or oil to prevent sticking.
  4. Pour the pancake batter onto the hot skillet, forming small circles (about 3-4 inches in diameter). Cook until the edges start to look set and bubbles form on the surface, about 2-3 minutes.
  5. Carefully flip the pancakes and cook for an additional 1-2 minutes on the other side, or until they’re cooked through and golden brown.
  6. Remove the pancakes from the skillet and serve hot with your choice of keto-friendly toppings like sugar-free syrup, whipped cream, berries, or nut butter.

The taste of these keto pancakes will depend on your personal preferences and any flavorings you add. Almond flour and coconut flour provide a nutty flavor, while the sweetener and vanilla extract can make them sweet and aromatic. Adjust the ingredients to suit your taste, and you can enjoy a fluffy, low-carb pancake experience that fits into your keto diet.
