KETO DEATH BY CHOCOLATE CAKE

Keto Death by Chocolate Cake is a low-carb, high-fat dessert option designed to fit within the ketogenic diet. It’s a rich and decadent chocolate cake that is low in carbohydrates and sugar, making it suitable for those following a keto lifestyle. Here’s a basic recipe to make a Keto Death by Chocolate Cake:

Ingredients:

For the cake:

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated erythritol or other keto-friendly sweetener
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened almond milk

For the chocolate ganache:

  • 4 ounces unsweetened chocolate
  • 1/4 cup heavy cream
  • 1/4 cup powdered erythritol or other keto-friendly sweetener
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, cocoa powder, coconut flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the melted butter and granulated erythritol until well combined.
  4. Add the eggs and vanilla extract to the butter mixture and whisk until smooth.
  5. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the unsweetened almond milk, beginning and ending with the dry ingredients. Mix until the batter is smooth.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  8. Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and place them on a wire rack to cool completely.
  9. To make the ganache, melt the unsweetened chocolate and heavy cream together in a microwave-safe bowl or using a double boiler until smooth. Stir in the powdered erythritol, vanilla extract, and a pinch of salt. Let it cool for a few minutes.
  10. Once the cakes are completely cool, spread a layer of the chocolate ganache on top of one of the cakes. Place the second cake on top and frost the entire cake with the remaining ganache.
  11. You can garnish with keto-friendly toppings like chopped nuts or shaved chocolate if desired.
  12. Refrigerate the cake for a few hours to allow the ganache to set before serving.
