Keto Carrot Cake Whoopie Pies are a low-carb and delicious twist on the classic whoopie pie, featuring the flavors of carrot cake without all the sugar and carbs. Here’s a keto-friendly recipe for you:

Ingredients:

For the Whoopie Pies:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Pinch of salt
  • 1/2 cup unsalted butter, melted
  • 1/3 cup granulated erythritol or preferred keto sweetener
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup finely grated carrots

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup powdered erythritol or preferred keto powdered sweetener
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a separate bowl, whisk together the melted butter, granulated erythritol, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  5. Fold in the grated carrots until evenly distributed throughout the dough.
  6. Using a cookie scoop or spoon, drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
  7. Gently flatten the dough mounds with the back of a spoon to create round discs.
  8. Bake in the preheated oven for 10-12 minutes, or until the whoopie pies are set and slightly golden around the edges.
  9. Remove from the oven and let the whoopie pies cool completely on a wire rack.
  10. While the whoopie pies are cooling, prepare the cream cheese filling. In a mixing bowl, beat together the softened cream cheese, softened butter, powdered erythritol, and vanilla extract until smooth and creamy.
  11. Once the whoopie pies are completely cooled, spread a generous amount of the cream cheese filling onto the flat side of one whoopie pie, then sandwich it with another whoopie pie.
  12. Repeat with the remaining whoopie pies and filling.
  13. Refrigerate the Keto Carrot Cake Whoopie Pies for at least an hour before serving to allow the flavors to meld and the filling to set.
