Keto Butter Pecan Cookies are a delicious low-carb, high-fat dessert option for those following a ketogenic diet. Here’s a simple recipe to make these tasty cookies:

Ingredients:

  • 1 cup almond flour
  • 1/2 cup finely chopped pecans
  • 1/4 cup unsalted butter, softened
  • 1/4 cup granulated erythritol or your preferred keto-friendly sweetener
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and erythritol until it’s well combined.
  3. Add the egg and vanilla extract to the butter mixture and continue to mix until smooth.
  4. In a separate bowl, whisk together the almond flour and salt.
  5. Gradually add the dry almond flour mixture to the wet ingredients, mixing until a dough forms.
  6. Fold in the finely chopped pecans until they are evenly distributed throughout the dough.
  7. Using a spoon or your hands, form small cookie dough balls and place them on the prepared baking sheet, leaving some space between each cookie.
  8. Flatten each cookie slightly with the back of a fork or your fingers.
  9. Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown.
  10. Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  11. Once the cookies have cooled, they are ready to enjoy!
