Keto Broccoli Stuffed Chicken

Certainly! Here’s a delicious recipe for keto broccoli stuffed chicken:

Ingredients:

For the Broccoli Stuffed Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 cup cooked and chopped broccoli (fresh or frozen)
  • 1/2 cup shredded mozzarella cheese (or your preferred cheese)
  • 2 tbsp cream cheese
  • 1 clove garlic, minced
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for cooking

For the Seasoning:

  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the cooked and chopped broccoli, shredded mozzarella cheese, cream cheese, minced garlic, onion powder, salt, and pepper. Mix well until all the ingredients are combined.
  3. Carefully slice a pocket into each chicken breast, being careful not to cut all the way through. You want to create a space for the stuffing.
  4. Stuff each chicken breast with the broccoli and cheese mixture, pressing the mixture gently into the pocket.
  5. In a small bowl, mix together the paprika, dried oregano, dried thyme, garlic powder, salt, and pepper to create the seasoning blend.
  6. Rub the seasoning blend over both sides of each stuffed chicken breast.
  7. Heat a skillet over medium-high heat with a bit of olive oil. Once hot, add the stuffed chicken breasts and sear for 2-3 minutes on each side, until they develop a golden-brown crust.
  8. Transfer the seared chicken breasts to a baking dish and place them in the preheated oven. Bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.
  10. Serve the keto broccoli stuffed chicken with your choice of low-carb side dishes, such as a salad, roasted vegetables, or cauliflower rice.
