Hawaiian pineapple cake

Hawaiian Pineapple Cake is a delicious and tropical dessert that combines the flavors of sweet pineapple and coconut. It’s perfect for a luau-themed party or simply as a refreshing treat. Here’s a basic recipe for making Hawaiian Pineapple Cake:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup canned crushed pineapple (with juice)
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Pineapple Filling:

  • 1 (20-ounce) can crushed pineapple (drained)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water

For the Coconut Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup shredded coconut
  • 1 teaspoon vanilla extract

For Garnish (optional):

  • Additional shredded coconut
  • Maraschino cherries

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

2. Prepare the Cake:

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Add the softened butter, crushed pineapple (with juice), buttermilk, eggs, and vanilla extract. Mix until well combined.
  • Pour the batter into the prepared baking pan.

3. Bake:

  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool completely in the pan.

4. Prepare the Pineapple Filling:

  • In a saucepan, combine the drained crushed pineapple, granulated sugar, cornstarch, and water.
  • Cook over medium heat, stirring constantly, until the mixture thickens (about 5 minutes).
  • Remove from heat and let it cool.

5. Make the Coconut Cream Cheese Frosting:

  • In a mixing bowl, beat the softened cream cheese and butter until smooth.
  • Gradually add the powdered sugar and vanilla extract, continuing to beat until the frosting is creamy.
  • Stir in the shredded coconut.

6. Assemble the Cake:

  • Once the cake and pineapple filling are completely cooled, spread the pineapple filling evenly over the cake.
  • Then, spread the coconut cream cheese frosting over the pineapple filling.

7. Garnish (Optional):

  • Garnish the cake with additional shredded coconut and maraschino cherries for a tropical touch.

8. Serve:

  • Slice and serve your Hawaiian Pineapple Cake. Enjoy!
