Ground Beef Vegetable Soup

Ground beef vegetable soup is a hearty and flavorful soup that combines ground beef with a variety of vegetables and seasonings. It’s a comforting and nutritious dish that’s perfect for a cold day or when you’re looking for a wholesome meal. Here’s a basic recipe for making ground beef vegetable soup:

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, diced (any color)
  • 1 zucchini, diced
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) tomato sauce
  • 4 cups beef broth or vegetable broth
  • 1 cup frozen corn kernels
  • 1 cup frozen green beans
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley or basil for garnish (optional)

Instructions:

  1. Heat a large soup pot or Dutch oven over medium-high heat. Add a drizzle of olive oil, then add the ground beef. Cook the beef, breaking it apart with a spoon, until it’s browned and cooked through. Remove any excess fat.
  2. Add the chopped onion and minced garlic to the pot with the cooked beef. Sauté for a few minutes until the onion becomes translucent.
  3. Stir in the sliced carrots, celery, diced bell pepper, and diced zucchini. Cook for another 5 minutes, stirring occasionally.
  4. Add the diced tomatoes, tomato sauce, beef broth, dried thyme, and dried oregano to the pot. Stir everything together and bring the soup to a simmer.
  5. Reduce the heat to low, cover the pot, and let the soup simmer for about 20-30 minutes, or until the vegetables are tender.
  6. Add the frozen corn and green beans to the soup. Simmer for an additional 5-10 minutes, or until they are heated through and the soup is well blended.
  7. Taste the soup and season with salt and pepper as needed.
  8. Serve hot, garnished with fresh parsley or basil if desired.

You can customize this soup by adding other vegetables you like or adjusting the seasonings to suit your taste. It’s a versatile dish that can be enjoyed year-round and is a great way to incorporate plenty of vegetables into your diet
