A gingerbread cake with a rich layer of cinnamon sounds delicious! Here’s a simple yet flavorful recipe you can try to make this cake:

Ingredients:

For the Gingerbread Cake:

  • 1 ¾ cups all-purpose flour
  • 1 ½ teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup unsulfured molasses
  • ¾ cup brown sugar (packed)
  • ½ cup unsalted butter, melted
  • 1 cup hot water
  • 1 teaspoon vanilla extract

For the Cinnamon Layer:

  • 1 tablespoon ground cinnamon
  • 2 tablespoons sugar
  • 2 tablespoons unsalted butter, softened

Optional Topping:

  • Whipped cream or vanilla ice cream for serving

Instructions:

  1. Preheat the oven: Set your oven to 350°F (175°C) and grease an 8-inch square or round baking pan.
  2. Make the dry ingredients: In a large bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
  3. Mix the wet ingredients: In another bowl, whisk together the egg, molasses, brown sugar, melted butter, hot water, and vanilla extract until smooth.
  4. Combine wet and dry: Gradually stir the wet ingredients into the dry ingredients. Mix until just combined. The batter will be thin.
  5. Prepare the cinnamon layer: In a small bowl, mix the cinnamon, sugar, and softened butter until a smooth paste forms.
  6. Layer the cinnamon mixture: Pour half of the gingerbread batter into the prepared pan. Spoon the cinnamon mixture on top of the batter and spread it evenly. Then, pour the remaining batter over the cinnamon layer.
  7. Bake the cake: Place the pan in the oven and bake for 30–40 minutes, or until a toothpick inserted in the center of the cake comes out clean. The cinnamon layer should have swirled beautifully through the cake.
  8. Cool and serve: Let the cake cool for about 10 minutes before serving. You can serve it warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
