Garlic chicken stir fry is a quick and tasty dish that combines tender pieces of chicken with flavorful garlic and a variety of vegetables. Here’s a simple recipe to get you started:

Ingredients:

For the Marinade:

  • 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine or dry sherry (optional)
  • 1 tablespoon cornstarch

For the Stir Fry Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon sesame oil

For the Stir Fry:

  • 2 tablespoons vegetable oil (divided)
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced (optional)
  • 1 red bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 1 cup broccoli florets
  • 1 cup snap peas or snow peas, trimmed
  • 1 carrot, sliced into thin rounds
  • 1 cup sliced mushrooms (optional)
  • Sliced green onions (for garnish)
  • Cooked rice or noodles (for serving)

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine the chicken pieces with 2 tablespoons of soy sauce, 1 tablespoon of rice wine (if using), and 1 tablespoon of cornstarch. Mix well and let it marinate for at least 15-20 minutes while you prepare the other ingredients.
  2. Prepare the Stir Fry Sauce:
    • In a separate bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, brown sugar, and sesame oil. Set this sauce aside.
  3. Stir Fry the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.
    • Add the marinated chicken and stir-fry until it’s no longer pink and starts to turn golden brown. This should take about 3-4 minutes. Remove the cooked chicken from the skillet and set it aside.
  4. Stir Fry the Vegetables:
    • In the same skillet, add the remaining 1 tablespoon of vegetable oil.
    • Add the minced garlic and ginger (if using), and stir-fry for about 30 seconds until fragrant.
    • Add the bell peppers, broccoli, snap peas, carrot, and mushrooms (if using). Stir-fry the vegetables for 3-4 minutes or until they start to become tender but are still crisp.
  5. Combine and Finish:
    • Return the cooked chicken to the skillet with the vegetables.
    • Pour the stir-fry sauce over the chicken and vegetables.
    • Stir everything together and cook for an additional 2-3 minutes until the sauce thickens and coats the chicken and vegetables.
  6. Serve:
    • Garnish the garlic chicken stir fry with sliced green onions.
    • Serve hot over cooked rice or noodles.
