  • 1 1/2 cups long-grain white rice

  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 can (14 oz) diced tomatoes, undrained

  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Chicken:
    • In a large skillet or pan, heat a couple of tablespoons of olive oil over medium-high heat.
    • Season the chicken pieces with salt and pepper.
    • Add the chicken to the hot skillet and cook until browned on all sides. Remove from the skillet and set aside.
  2. Sauté Vegetables:
    • In the same skillet, add a bit more olive oil if needed.
    • Add chopped onions, garlic, bell pepper, and carrot. Sauté until the vegetables are softened.
  3. Combine Ingredients:
    • Stir in the rice and let it toast for a minute or two.
    • Add the diced tomatoes (with their juices), chicken broth, dried thyme, dried oregano, and paprika. Mix everything well.
  4. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low. Place the browned chicken pieces on top of the rice mixture.
    • Cover the skillet and let it simmer on low heat for about 20-25 minutes, or until the rice is cooked, and the chicken is fully cooked through.
  5. Serve:
    • Once the rice is cooked, fluff it with a fork. Taste and adjust the seasoning if necessary.
    • Garnish with fresh parsley if desired and serve hot.
