Easy Zuppa Toscana Soup RECIPE

Here’s an easy recipe for Zuppa Toscana Soup, a hearty and comforting Italian soup with a delicious combination of potatoes, sausage, and kale. This version is quick and simple to make!

Ingredients:

  • 1 lb Italian sausage (bulk or casings removed)
  • 4-5 medium potatoes (Yukon Gold or Russet), thinly sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped (or spinach if preferred)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1/2 tsp crushed red pepper flakes (optional, for a little heat)
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Instructions:

  1. Cook the Sausage:
    • Heat a large pot over medium heat and add a little olive oil.
    • Add the Italian sausage, breaking it apart with a spoon, and cook until browned and fully cooked through. Remove the sausage from the pot and set it aside.
  2. Sauté the Vegetables:
    • In the same pot, add the diced onion and cook for about 3-4 minutes until softened.
    • Add the minced garlic and cook for another 1 minute until fragrant.
  3. Simmer the Soup:
    • Add the sliced potatoes to the pot, followed by the chicken broth. Stir to combine.
    • Bring the soup to a boil, then reduce the heat to a simmer. Cook for about 15-20 minutes, until the potatoes are tender.
  4. Add the Kale and Sausage:
    • Add the chopped kale and cooked sausage back into the pot.
    • Stir in the heavy cream, and season with salt, pepper, and red pepper flakes if desired.
  5. Final Simmer:
    • Let the soup simmer for an additional 5 minutes to combine the flavors. Adjust seasoning to taste.
  6. Serve:
    • Ladle the soup into bowls and serve hot. Optionally, you can top with some grated Parmesan cheese.
