Crockpot Ranch Chicken and Potatoes

Certainly! Here’s a simple recipe for Crockpot Ranch Chicken and Potatoes:

Ingredients:

  • 4-6 boneless, skinless chicken breasts
  • 6-8 medium-sized potatoes, washed and diced
  • 1 packet (1 ounce) dry ranch dressing mix
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Place the diced potatoes at the bottom of the slow cooker.
  2. Season the chicken breasts with salt and pepper, then place them on top of the potatoes.
  3. In a bowl, mix the dry ranch dressing mix with sour cream. Pour this mixture over the chicken and potatoes.
  4. Pour chicken broth over the mixture in the slow cooker.
  5. Set the slow cooker to low heat and cook for 6-8 hours or until the chicken is cooked through and the potatoes are tender.
  6. Optional: In the last 30 minutes of cooking, sprinkle shredded cheddar cheese over the chicken and potatoes.
  7. Once the chicken and potatoes are cooked, use two forks to shred the chicken directly in the slow cooker. Mix everything well to combine.
  8. Garnish with fresh chopped parsley if desired.
  9. Serve the Crockpot Ranch Chicken and Potatoes warm, and enjoy!

Note: You can customize this recipe by adding vegetables like carrots or broccoli, or adjusting the seasoning to suit your taste. Additionally, you can use skin-on chicken if you prefer, and cook on high heat for a shorter period if you’re pressed for time.
