Crockpot Ham, Green Beans and Potatoes

Certainly! Here’s a simple recipe for Crockpot Ham with Green Beans and Potatoes:

Ingredients:

  • 1.5 to 2 pounds of ham, diced or ham hocks
  • 1.5 pounds of fresh green beans, washed and trimmed
  • 4 to 5 medium-sized potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

  1. Place the diced ham, green beans, potatoes, chopped onion, and minced garlic in the slow cooker.
  2. Pour the chicken or vegetable broth over the ingredients in the slow cooker.
  3. Add dried thyme, dried rosemary, salt, and pepper to taste. Stir the ingredients to combine.
  4. Cover the slow cooker with the lid and cook on low for 6-8 hours or until the potatoes are tender.
  5. Check for seasoning and adjust salt and pepper if needed before serving.
  6. Optionally, you can garnish with fresh herbs like parsley before serving.
  7. Serve the delicious Crockpot Ham, Green Beans, and Potatoes hot, and enjoy!

Note: If you prefer a thicker broth, you can mix 2 tablespoons of cornstarch with a little water and add it to the slow cooker during the last 30 minutes of cooking. Stir well and let it thicken. Adjust the seasoning as necessary.
