Crockpot Beef Tips & Gravy

Certainly! Here’s a simple recipe for Crockpot Beef Tips & Gravy:

Ingredients:

  • 2 pounds beef tips or stew meat
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1/4 cup water
  • 2 tablespoons olive oil
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, heat olive oil over medium-high heat. Add the beef tips and brown them on all sides. This helps to seal in the juices and adds flavor to the dish.
  2. Once the beef is browned, transfer it to the slow cooker.
  3. In the same skillet, add chopped onions and minced garlic. Sauté until the onions are translucent and the garlic is fragrant.
  4. Add flour to the skillet and stir to coat the onions and garlic. Cook for 1-2 minutes to remove the raw taste of the flour.
  5. Slowly whisk in beef broth, soy sauce, and Worcestershire sauce. Continue stirring until the mixture thickens.
  6. Pour the gravy mixture over the beef tips in the slow cooker.
  7. Add thyme, rosemary, paprika, and black pepper to the slow cooker. Stir to combine.
  8. Cover the slow cooker and cook on low for 6-8 hours or until the beef is tender.
  9. In a small bowl, mix water and flour to create a slurry. Stir the slurry into the slow cooker to thicken the gravy.
  10. Taste and adjust the seasoning if needed.
  11. Serve the beef tips and gravy over mashed potatoes, rice, or noodles. Garnish with chopped fresh parsley if desired.
