Crispy Butter Chicken

Crispy Butter Chicken is a delicious variation of the classic Butter Chicken, featuring a crispy texture on the outside while maintaining the tender and flavorful chicken on the inside. Here’s a simple recipe for Crispy Butter Chicken:

Ingredients:

For the Marinade:

  • 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste

For the Coating:

  • 1 cup all-purpose flour
  • 1 cup cornflour
  • 1 teaspoon baking powder
  • Salt and pepper to taste

For the Butter Chicken Sauce:

  • 2 tablespoons butter
  • 1 large onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 cup tomato puree
  • 1 cup heavy cream
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. In a bowl, mix together the yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt for the marinade. Add the chicken pieces, ensuring they are well-coated. Marinate for at least 2 hours, preferably overnight in the refrigerator.
  2. Preheat your oven to 400°F (200°C).
  3. In a separate bowl, mix together the all-purpose flour, cornflour, baking powder, salt, and pepper for the coating.
  4. Remove the marinated chicken from the refrigerator. Dredge each piece of chicken in the coating mixture, ensuring it’s well-covered.
  5. Place the coated chicken on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes or until the chicken is golden brown and crispy.
  6. While the chicken is baking, prepare the butter chicken sauce. In a pan, melt butter over medium heat. Add chopped onions and sauté until they become translucent.
  7. Add ginger-garlic paste, turmeric powder, red chili powder, and garam masala. Cook for 2-3 minutes until the raw smell disappears.
  8. Stir in the tomato puree and cook for another 5-7 minutes until the sauce thickens.
  9. Add heavy cream and salt to taste. Simmer for an additional 5 minutes.
  10. Once the chicken is crispy and cooked through, add it to the butter chicken sauce. Stir until the chicken is well-coated with the sauce.
  11. Garnish with fresh cilantro and serve the Crispy Butter Chicken hot with naan or rice.
