Certainly! Here’s a simple recipe for creamy lemon squares:

Ingredients:

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar

For the Filling:

  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup heavy cream

For the Topping:

  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a medium bowl, mix together the flour, softened butter, and powdered sugar for the crust. Press the mixture evenly into the bottom of the prepared pan.
  3. Bake the crust in the preheated oven for about 15-20 minutes or until it’s lightly golden.
  4. While the crust is baking, prepare the filling. In a separate bowl, whisk together the granulated sugar, flour, baking powder, and a pinch of salt.
  5. Add the eggs, lemon juice, lemon zest, and heavy cream to the dry ingredients. Whisk until well combined.
  6. Once the crust is done baking, pour the lemon filling over the hot crust.
  7. Bake for an additional 20-25 minutes or until the filling is set and the edges are lightly browned.
  8. Allow the lemon squares to cool completely in the pan on a wire rack.
  9. Once cooled, you can dust the top with powdered sugar if desired.
  10. Cut into squares and enjoy your creamy lemon squares!
