Cream Cheese Chicken Enchiladas

Cream Cheese Chicken Enchiladas are a delicious and creamy variation of traditional chicken enchiladas. Here’s a simple recipe for you:

Ingredients:

For the Filling:

  • 2 cups cooked and shredded chicken (rotisserie chicken works well)
  • 1 cup cream cheese, softened
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1 can (4 oz) diced green chilies, drained
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

For the Enchilada Sauce:

  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 1 can (14 oz) chicken broth
  • 1 cup sour cream
  • 1 can (4 oz) diced green chilies, drained
  • Salt and pepper to taste

For Assembling:

  • 8-10 flour tortillas
  • 1 cup shredded Monterey Jack cheese for topping
  • Chopped fresh cilantro for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, cream cheese, shredded Monterey Jack cheese, sour cream, diced green chilies, ground cumin, chili powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. In a separate saucepan, heat olive oil over medium heat. Stir in the flour to create a roux. Cook for 1-2 minutes, stirring constantly.
  4. Gradually whisk in the chicken broth until the mixture is smooth and thickened.
  5. Add sour cream and diced green chilies to the sauce, stirring well. Season with salt and pepper to taste. Remove from heat.
  6. Take each flour tortilla and spoon a generous portion of the chicken mixture onto the center. Roll the tortilla and place it seam side down in a greased baking dish.
  7. Pour the prepared enchilada sauce over the rolled tortillas, making sure they are all covered.
  8. Sprinkle shredded Monterey Jack cheese over the top.
  9. Bake in the preheated oven for 25-30 minutes or until the enchiladas are hot and bubbly, and the cheese is melted and golden.
  10. Remove from the oven and let it rest for a few minutes before serving.
  11. Garnish with chopped fresh cilantro if desired, and serve warm.
