Chicken Fried Rice air fryer recipe

Chicken fried rice is a popular and delicious dish that you can easily make at home. Here’s a simple recipe to prepare chicken fried rice:

Ingredients:

  • 2 cups cooked and chilled white rice (preferably leftover rice)
  • 2 boneless, skinless chicken breasts, cut into small pieces
  • 2 tablespoons vegetable oil (divided)
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 large eggs, beaten
  • 2-3 tablespoons soy sauce (adjust to taste)
  • 1 teaspoon sesame oil (optional, for added flavor)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish, optional)

Instructions:

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken pieces to the hot skillet. Season with a pinch of salt and pepper. Stir-fry the chicken until it’s cooked through and lightly browned, about 5-6 minutes. Remove the cooked chicken from the skillet and set it aside.
  3. In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add minced garlic and cook for about 30 seconds until fragrant.
  4. Push the garlic to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until they are fully cooked.
  5. Add the frozen mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are heated through.
  6. Add the chilled cooked rice to the skillet. Use a spatula to break up any clumps of rice and mix everything together.
  7. Pour the soy sauce over the rice and stir-fry for a few minutes, ensuring the rice is evenly coated and heated through. If using sesame oil, add it at this point and mix it in.
  8. Return the cooked chicken to the skillet and stir-fry for another 2-3 minutes to combine all the ingredients and heat the chicken.
  9. Taste the fried rice and adjust the seasoning with more soy sauce, salt, or pepper if needed.
  10. Garnish with chopped green onions if desired and serve hot.

Your homemade chicken fried rice is ready to enjoy. It’s a versatile dish, so feel free to customize it with your favorite vegetables or add extra seasoning according to your taste preferences.
