Cheese Shrimp Penne Pasta & Spinach

Certainly! Below is a simple recipe for Cheese Shrimp Penne Pasta with Spinach:

Ingredients:

  • 8 oz penne pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional, for some heat)
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach, washed and chopped
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Cook the penne pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for about 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet, season with salt and black pepper, and cook for 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
  5. Add the cooked penne pasta and chopped spinach to the skillet. Toss everything together until the spinach wilts.
  6. Return the cooked shrimp to the skillet and mix well with the pasta and vegetables.
  7. Sprinkle grated Parmesan cheese and shredded mozzarella cheese over the pasta. Stir until the cheese is melted and coats the pasta evenly.
  8. Adjust seasoning with salt and black pepper to taste.
  9. Serve the Cheese Shrimp Penne Pasta & Spinach hot, garnished with fresh basil or parsley if desired.
