A Hearty Chicken and Biscuits Casserole is a warm and comforting dish that’s perfect for a family dinner or to serve on a chilly evening. It combines tender chicken, vegetables, a rich creamy sauce, and soft, flaky biscuit topping. Here’s a recipe for you:

Hearty Chicken and Biscuits Casserole

Ingredients:

  • For the casserole:
    • 3 cups cooked, shredded chicken (rotisserie chicken works great)
    • 1 cup frozen peas and carrots (or mixed vegetables of choice)
    • 1/2 cup chopped onion
    • 1/2 cup celery, diced
    • 2 cloves garlic, minced
    • 1 (10.5 oz) can cream of chicken soup
    • 1/2 cup sour cream or Greek yogurt
    • 1 cup chicken broth
    • 1 teaspoon dried thyme
    • Salt and pepper to taste
    • 2 tablespoons butter (optional for added richness)
  • For the biscuit topping:
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon garlic powder (optional)
    • 1/2 cup cold butter, cut into small cubes
    • 3/4 cup whole milk (or buttermilk for a tangier taste)

Instructions:

  1. Prepare the chicken and vegetables:
    • Preheat your oven to 375°F (190°C).
    • In a large skillet, melt butter over medium heat. Add the chopped onion, celery, and garlic. Sauté for about 5 minutes until softened.
    • Add the frozen peas and carrots (or your chosen vegetables) and cook for another 3-4 minutes.
  2. Make the casserole filling:
    • To the skillet, add the shredded chicken, cream of chicken soup, sour cream, and chicken broth. Stir until well combined.
    • Season with dried thyme, salt, and pepper to taste. Simmer for 5-7 minutes, allowing the flavors to meld together.
    • Pour the mixture into a greased 9×13 inch baking dish and spread it evenly.
  3. Prepare the biscuit topping:
    • In a large bowl, whisk together the flour, baking powder, salt, and garlic powder (if using).
    • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Gradually add the milk and stir until just combined (don’t overwork the dough).
  4. Assemble the casserole:
    • Drop spoonfuls of the biscuit dough on top of the chicken mixture, covering the surface. It’s okay if the biscuits aren’t perfectly arranged, as they will spread and puff up while baking.
  5. Bake:
    • Place the casserole in the preheated oven and bake for 30-35 minutes, or until the biscuit topping is golden brown and the filling is bubbling.
    • If the biscuits start to brown too quickly, cover the casserole with foil and continue baking until done.
  6. Serve:
    • Let the casserole sit for 5-10 minutes before serving. This helps the filling thicken slightly.
    • Serve hot and enjoy the hearty, comforting flavors!
