Cabbage and Sausage Soup Recipe

Cabbage and sausage soup is a hearty and flavorful dish that’s perfect for a comforting meal. Here’s a simple recipe for you to try:

Ingredients:

  • 1 pound (450g) smoked sausage (such as kielbasa or Andouille), sliced into rounds
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 small head of cabbage, chopped (about 6 cups)
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish (optional)

Instructions:

  1. Heat a large soup pot or Dutch oven over medium-high heat. Add a drizzle of olive oil, and then add the sliced sausage. Cook the sausage until it’s browned and has released some of its flavorful juices, about 5 minutes. Remove the sausage from the pot and set it aside.
  2. In the same pot, add a bit more olive oil if needed, and then add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes, or until the vegetables start to soften and the onion becomes translucent.
  3. Add the chopped cabbage to the pot and cook for another 5 minutes, stirring occasionally, until it begins to wilt and soften.
  4. Return the cooked sausage to the pot, and add the diced tomatoes (with their juices), dried thyme, bay leaf, and chicken or vegetable broth. Stir everything together.
  5. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the cabbage and vegetables are tender.
  6. Taste the soup and season with salt and pepper according to your preference. Remember that smoked sausages can be quite salty, so be cautious with the salt.
  7. Remove the bay leaf from the soup before serving.
  8. Ladle the cabbage and sausage soup into bowls and garnish with fresh parsley if desired.

This hearty and comforting soup is perfect for a chilly day. You can serve it with crusty bread or crackers for a complete meal. Enjoy!
