Cabbage and sausage soup is a hearty and flavorful dish that’s perfect for a comforting meal. Here’s a simple recipe for you to try:
Ingredients:
- 1 pound (450g) smoked sausage (such as kielbasa or Andouille), sliced into rounds
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 small head of cabbage, chopped (about 6 cups)
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 can (14.5 ounces) diced tomatoes
- 6 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish (optional)
Instructions:
- Heat a large soup pot or Dutch oven over medium-high heat. Add a drizzle of olive oil, and then add the sliced sausage. Cook the sausage until it’s browned and has released some of its flavorful juices, about 5 minutes. Remove the sausage from the pot and set it aside.
- In the same pot, add a bit more olive oil if needed, and then add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes, or until the vegetables start to soften and the onion becomes translucent.
- Add the chopped cabbage to the pot and cook for another 5 minutes, stirring occasionally, until it begins to wilt and soften.
- Return the cooked sausage to the pot, and add the diced tomatoes (with their juices), dried thyme, bay leaf, and chicken or vegetable broth. Stir everything together.
- Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the cabbage and vegetables are tender.
- Taste the soup and season with salt and pepper according to your preference. Remember that smoked sausages can be quite salty, so be cautious with the salt.
- Remove the bay leaf from the soup before serving.
- Ladle the cabbage and sausage soup into bowls and garnish with fresh parsley if desired.
This hearty and comforting soup is perfect for a chilly day. You can serve it with crusty bread or crackers for a complete meal. Enjoy!
