Beef Roast Pot Recipe
Ingredients:
- 3-4 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 4 carrots, peeled and cut into chunks
- 3 potatoes, peeled and cut into chunks
- 2 stalks celery, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- Preheat your oven to 325°F (160°C).
- Season the beef roast generously with salt and pepper.
- In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Sear the beef on all sides until it’s browned. Remove the beef and set it aside.
- In the same pot, sauté the onion and garlic until they are soft and fragrant.
- Return the beef to the pot. Add the beef broth and red wine, if using. The liquid should come about halfway up the sides of the roast. Add more beef broth if needed.
- Add the carrots, potatoes, and celery to the pot, arranging them around the beef.
- Sprinkle the thyme and rosemary over the beef and vegetables.
- Cover the pot with a lid and transfer it to the preheated oven.
- Roast for about 3-4 hours, or until the beef is tender and easily shreds with a fork.
- Remove the pot from the oven and let the beef rest for a few minutes before slicing.
- Serve the beef with the vegetables and some of the cooking juices from the pot. Garnish with chopped fresh parsley if desired.
Enjoy your flavorful and tender beef roast pot!
