Beef & Barley Soup Crock Pot

Certainly! Here’s a simple recipe for Beef and Barley Soup that you can make in a crockpot:

Ingredients:

  • 1.5 lbs (680g) beef stew meat, cut into bite-sized pieces
  • 1 cup barley, rinsed
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, brown the beef stew meat over medium-high heat. This step is optional but adds flavor to the soup. Once browned, transfer the meat to the crockpot.
  2. Add barley, chopped onion, sliced carrots, sliced celery, minced garlic, diced tomatoes (with juice), dried thyme, dried rosemary, and bay leaves to the crockpot.
  3. Pour in the beef broth, making sure all the ingredients are submerged. Season with salt and pepper to taste.
  4. Stir the ingredients in the crockpot to combine.
  5. Cover and cook on low for 8 hours or until the beef and vegetables are tender.
  6. Before serving, remove the bay leaves and adjust the seasoning if necessary.
  7. Ladle the soup into bowls, and if desired, garnish with chopped fresh parsley.
